Colorado to Cali

Im planning a ride leaving friday from I-70 in Colorado to SoCal with a stop in Utah (around I-15). on day 1.
2 days in Vegas, arrive in LA on Monday.
I dont know if I can do the full trip in one day. Id rather be able to stop, look around, take some pics,
You know the drill.
Does anyone know of a good inexpensive place to stay on the way?
Maybe places I should grab a bite to eat at?
